Mashed Cauliflower and Green

Bean Casserole Ingredients ¾ cup of coconut milk ½ cup of nutritional yeast 1 cauliflower Salt and pepper to taste 14 ounces of green beans, trimmed 1 onion, diced Instructions i. In a skillet, cook cauliflower florets in vegetable broth and some olive oil. ii.

Add in onions and beans and cook for a little longer. Transfer the mixture into a blender and add coconut milk, nutritional yeast, salt and pepper and blend until smooth. iii. In a baking sheet, assemble green bean mix, mashed cauliflower, and toppings and bake for 15 to 20 minutes at 400 degrees F.
